So everyone laughed when I said I planted 4 cherry tomato plants and I didn't quite understand when they said I was going to have way too many. They weren't kiddinng.... I have WAY WAY too many! I don't even like fresh tomatos (but I soooo wish I did, they look amazing). I literally can't pick them all. There is a layer of tomatoes that have fallen off and are just laying under the bushes, yes I meant to say bushes!, and are turning into compost!
I put Brielle to work helping pick them last night and we still didn't really make a dent. However, we did pick A TON. So I needed to find something to do with them all. I found a recipe for tomato bread that looks awesome, I'm excited to try it tomorrow to go with lunch.
For dinner I decided to roast a cookie sheet full with a little olive oil, salt, garlic, and basil at 300 degrees for about an hour. Then I tossed them with some whole wheat penne, spinach, garlic, olive oil and parm. I threw it in the oven on 350 for about 30 minutes.
If you've got extras, I'll take whatever you don't want!! I just half them and throw them in with the regular tomatoes for spaghetti sauce, ketchup etc etc etc
ReplyDeletethere is NEVER too many cherry tomatoes at this house. Son just eats them off the plants and they never make them inside!!! That looks really good!
