Breakfast this morning went great! I always love having company. My sister decided to mix things up a bit and came over at 7:45 instead of 8:15 and had to eat and get a coffee to go before 8:20. This threw off my morning a bit and I'm using the excuse to explain why 5:00 came along and I hadn't started anything today.
I did make coleslaw but I didn't figure that really counted, although, I did cut myself pretty good on the grater while I was shredding it.
So this evening, I hopped online and found this recipe on another blog and while I was on the phone with my girlfriend Meredith, thelosthousewife.blogspot.com, I wiped these up. Literally they took like 10 minutes. They are chilling in the fridge as I type. From what I can tell from the spoon cleaning, they are pretty darn tasty!
No Bake Chocolate Peanut Butter Oatmeal Cookies
(adapted from Ezra Poundcake) I got it from the blog "Everybody likes Sandwiches"
1/2c butter
2 c sugar
1 t salt
1/2 c milk
4 T cocoa (I used Ovaltine, because it's all I had)
1/2 c natural peanut butter
3 to 3 1/2 c old fashioned oats
2 teaspoons vanilla
In a medium sized saucepan, mix together the first 5 ingredients and bring to a boil.
Let boil for 1 minute and then remove from heat. Add in remaining ingredients.
Use a teaspoon to drop the mixture onto the cookie sheets lined with wax paper. Chill until set. Keep in the refrigerator.
Update: 7-30-12 I just made these again yesterday and followed this recipe and discovered that I seriously messed up! It's not 2 Tablespoons of vanilla but teaspoons. Oh my goodness. They are not so yummy with that much vanilla.
If you continue on in this manner, how will the rest of us ever expect to be even mediocre housewives????
