"Better than a" Bake Sale

When I hear "bake sale" I see cookies in ziploc bags and brownies wrapped in cling wrap. My mind immediately jumps to concerns about the cleanliness of the "baker's" home. I realize this makes me sound a tad crazy, but that's how my brain works. So when it was suggested that we do a bake sale to raise money to fund the childrens party we are having at the church I was not immediately on board.
However, Kerri and I came up with a solution. We would make everything in our kitchens, clean them well and follow professional kitchen standards while we made the goodies. We also decided to try a little harder on packaging, mostly because I just can't handle the baggies and cling wrap. It makes me crazy!!
When deciding what to make we had to factor in cost because we are trying to recover our cost of ingredients as well as make some profit to put toward the fall party.
Sidenote: If I haven't mentioned this yet, Kerri is a total trooper.... she's 7+ months pregnant! Yep, I didn't even cook dinner for my family when I was that pregnant (at least not without complaining - loudly!) but here she is making stuff for a bake sale, with a smile on her face to boot!!
Ok, so I settled on pumpkin muffins stuffed with cream cheese icing and Caramel Popcorn. I used this recipe for the Caramel Corn. And I must say, it's pretty stinkin' good. It's like Cracker Jacks on crack! I made one batch to the recipe exactly, then made a double batch after I figured out how to do it. It is pretty time intensive, just because you really have to pay attention while making the caramel sauce and remembering to stir every 20 minutes. The end result is totally worth it though.

I used Martha's recipe for Pumpkin Bread and her recipe for Cream cheese icing and made the bread into muffins instead of loaves. I used a thingy from Tupperware to push the icing into the tops of the muffins.
 I'm having a hard time finding a link to the Cream Cheese icing so here's the recipe:
1 block of cream cheese at room temperature
3/4 cup of confectioners sugar
1/2 teaspoon of vanilla extract
Mix until smooth.
